If we cannot afford Umrah immediately and think about saving up over time to go, is that okay? Or is it better to keep saving that same money to perform Hajj instead? Keeping in mind that Umrah costs approximately 200,000, while I believe Hajj costs around 1,000,000.

I don't quite understand your point; the fact is, if you can afford Umrah, why are you saving for it specifically when Umrah isn't even obligatory (Fard)? Hajj is what is obligatory. You should look at your 'worth'—just as we look at the net worth of people like Bill Gates or Elon Musk. Look at your entire estate, your profit and loss, and see what you are truly worth. If your financial standing/capacity is at the level of 1,000,000, then Hajj is mandatory for you.
