My question is: Regarding the Qada (make-up) fasts we observe, it is preferable to fast them on Mondays or Thursdays, but can these fasts be observed on a Saturday or a Sunday? Is there a concern that since Jews and Christians also fast on these days, it might constitute resemblance (tashabbuh) to them, and according to a Hadith, the Prophet Muhammad (peace be blessings be upon him) forbade imitating them?

Who told you that fasts should be observed on Monday and Thursday? While it is preferable for regular (voluntary) fasts, there is no specific rule for Qada fasts. One should observe them whenever they get a chance. They can definitely be observed on Saturday and Sunday. Jews and Christians do not fast on these days; rather, these days are their relaxing days. So, you cannot simply miss days for Qada fasts. There are no restrictions for Qada fasts; you can observe them whenever you feel appropriate, even on Friday, because they are making up compulsory (Fard) fasts.
